Soft & Chewy Chocolate Chip Cookies

For today’s recipe I thought I’d add some chocolate into the mix. And what better way to represent chocolaty goodness than with some simple chocolate chip cookies.

For the longest time I thought had the best chocolate chip cookie recipe—that is, until I found this one. I’ve talked about my love for soft and chewy cookies, and although I'm not a super fan of chocolate, these cookies by  Baker Bettie fulfil all of my requirements perfectly.

Just a little tip: I suggest you have company over before you attempt to bake these, or else you will end up eating the whole lot. YES, they are that amazing, Consider yourselves warned.

One more tip: you better have your cup of milk on standby. You will need it!


Soft & Chewy Chocolate Chip Cookies
Makes about 20 large cookies

Supplies
Measuring Cups
Hand Mixer or Kitchen Aid, or if you are going old school, a wooden spoon
2 large bowls
Baking trays
Wax paper

Ingredients
1½ cup Brown Sugar (318 g)—I used half Brown and half White
2 sticks Unsalted Butter, softened (227 g)
2 Eggs, room temp
1 tbsp Vanilla
1 tsp Baking Soda
1 tsp Salt
2½ cups Flour (318 g)
2 cups Chocolate Chips (about 10 oz) I used plain chocolate chips


Method
1. Preheat oven to 180C/350F, and line your baking sheets with parchment paper
2. Cream Butter and Sugar until light and fluffy. Then add Eggs (one at a time) and Vanilla. Beat until you have a silky, smooth consistency
3. In a different bowl, sift Flour, Salt, and Baking Soda. Then add this mixture, to your wet mixture. Beat until everything is well combined. Stir in your chocolate chips. Your dough should be a soft consistency—remember we are making soft& chewy cookies—so don’t panic if it’s not a sturdy dough

4. Scoop out dough—I used a bit more than a full tablespoon—onto your baking sheets. Make sure to leave enough space between them & don’t worry if they aren’t perfectly formed balls of dough. The best part of chocolate chip cookies are their irregular shape!

5. Bake for 10-12 minutes, rotating your baking sheet halfway through. Remove from the oven and let cool on a cooling rack or a flat plate. 

And there you have it. Delicious soft and chewy chocolate chip cookies. Truth: I ate about 3 of them while they were still warm. Best way to eat a cookie
